Cake! (not neccessarily vegan)

I like cake, so i thought I'd post some recipes to swap with other people.
Here's some that are easy to make and taste lovely...

Tea Loaf (from the Macmillan Cancer Support Little book of Treats)
350g/12oz mixed dried fruit
110g/4oz demerara sugar
250ml/9 fl oz cold strong black tea
1 large egg
225g/8oz self raising flour

  1. THE NIGHT BEFORE, place the dried fruit, sugar and tea in a bowl, cover and leave to soak for at least 6 hours.
  2. Preheat the oven to 150C/Gas mark 3. Line and grease a 1lb loaf tin.
  3. Beat the egg and flour into the soaked fruits until mixed in. Pour or spoon into the prepared tin and bake for and hour or until it's done (a skewer should come out clean).
  4. Cool it in the tin then slice it and eat it!
    It should last a while but it usually gets eaten before it has a chance to go off.

Chocolate loaf cake (from a label inside a Woolworths cake tin)
sorry, I copied this down and didn't bother with the metric measurements...
6oz plain flour
2oz cocoa
2tsp baking powder
half tsp bicarbonate of sode
quarter tsp salt
5oz sugar
2 eggs
3oz melted butter
8 fl oz milk

  1. Preheat oven to 180C/Gas mark 4. Line and grease a 2lb loaf tin.
  2. Sift together flour, cocoa, baking powder, bicarb, salk and sugar in a bowl.
  3. In a separate bowl or jug, melt the butter (in microwave or on hob) and then beat together with the eggs and milk.
  4. Pour the liquid mixture into the dry ingredients and stir thoroughly. Pour into the tin.
  5. Bake for 40-50 minutes, test with a skewer.
    Again, I'm not sure how long it keeps for but it should keep for a while!
