Lots of SCM Glasgow are, or have become for Lent, veggie or vegan. We were swapping some recipes, and I thought it might be a good thread to have on here...
So, anything from your favourite cake recipe, to big one-pot meals to cook for an SCM group. Go! =]
Vegan Pancakes
Regular pancake-y pancakes :
from Post Punk Kitchen
1 1/3 cups flour
2 tsp baking powder
1/4 teaspoon salt
1 cup soy or rice milk
1/3 cup carbonated water
1 tbsp sugar
1 tbsp vegetable or canola oil
Thick American-style pancakes
adapted from the Veganomicon
3/4 cup plain flour
1/2 cup porridge oats
1 tsp salt
1 tsp baking powder
1 cup soy yoghurt / soy milk
1/3 cup water
2 tbsp veg oil
(I like to add zest of 1 orange & 1/2 cup chocolate chips!)

Vegan Brownies
Found this awesome Vegan Brownie recipe a few years back when I was looking to bake birthday food for Vegan friend. Better than eggy ones in my opinion, with a crunchy top!

Red lentil and chickpea dahl
Made this tonight and it was really lovely:
Red lentils
Can of chickpeas
About an inch of fresh ginger, finely chopped
4 cloves of garlic, crished and chopped
2 veggie stock cubes
Onion finely chopped
Plenty of water
Garam masala
Hot chilli powder
Cinnamon stick
Cashew nuts/mushrooms
Basically stick it all in a big pan of boiling water, adding spice to taste. Serve with pitta bread or rice. Cashews or mushrooms will give the lentilly mush a bit more bite.
[Linda McCartney] sausage caserole
This is a bit of a cheat but its really nice. Swartz make a 'Sausage Caserole' Mix which is vegan. If you do it with linda mccartney sausages (or forget the sausages and do it with beans maybe) and cook it up with red peppers, onions and mushrooms, its really good.
Simple Chilli
Can't go wrong with this. (serves 2 with lots over...so more than 2)
Fry a large onion (or 2 if you like that sort of thing) and lots of crushed garlic.
Add a couple chopped red peppers
and a couple of tins of beans (vary these a bit- out favs are kidney and black eye beans... sometimes pinto
and quite a lot of sweetcorn
and chilli (either powdered or in their natural state)- as much as you like... and some cumin and oregano and whatever else you like in your chilli
and then a tin chopped tomatoes
Boil like mad- if it gets dry add water and some tomato puree
Add sugar if the tomatoes are a bit acidic
and more spices if it's not spicy enough...
Soup! (Leek, oat and potato soup)
I just thought I'd write down the recipe for the soup I made (up) at easter gathering:
(to serve 4 ish)
1 litre vegetable stock
3 or 4 medium sized potatoes
3 leeks
4 tbsp porridge oats (can also use oatmeal)
herbs/salt/pepper to taste
Method:
Peel potatoes & cut into the size you'd use for mash. Wash & trim leeks, cut into chunks about an inch long.
Bring the stock and potatoes to the boil, and boil for about twenty minutes. Add the leeks, and simmer for a further twenty minutes. Add seasoning/herbs to taste.
Add the oats, stirring to remove lumps, and simmer for five minutes. (if using oatmeal, cover and simmer for a further 15-20 mins until thickened)
Serve or if it's not needed till later, leave to cool and then bring back to the boil just before serving.
Soup!
Can I just say, that the Leek, oat and potato soup was absolutely amazing! I think we should resurrect it for the summer gathering.
